Apple & raisin chutney

Not content with the cider apple chutney recipe from the cookbook provided with the Tefal Vitafruit, I scoured the web and found something else to try.

The basic chutney recipe is a variation on a variation found in the comments of a BBC Good Food recipe for Classic Apple Chutney, for a half recipe. The quantities seemed about right for the Vitafruit and so I gave it a go!

Apple & Raisin Chutney

Yield: 5 x 8oz jars

750g cooking apples, peeled, cored and diced (weighed after peeling/coring)
300g light muscovado sugar
250g raisins
1 medium onions, finely chopped in the food processor
1 tsp mustard seeds
1 tsp ground ginger
1/2 tsp salt
300ml cider vinegar

Add all ingredients to the Vitafruit (ensuring nothing has been stranded on the sides), select program P5 (the dessert program) and press OK, add 30 minutes to the timer, and press OK to start the cycle.

Check the chutney after 20 minutes and at 5 minute intervals after that to ensure it doesn't get too dry. It will be thick and pulpy with no excess liquid when done.

Ladle into hot, sterilised jars (a jam funnel will help tremendously with this) and top with hot, sterilised vinegar-proof lids (I use jars and lids from Lakeland). Leave to cool completely before labelling.

Let the flavour mature by storing in a cool, dry place for 6-8 weeks, store in the refrigerator after opening, and eat within 1 year of making.
